Rotary & Lions Club Dinners

On Tuesdays 11 and 25 August, the year 11 and 12 Hospitality students hosted both the Rotary and Lions Clubs for their dinner meetings. Throughout the term, students research and trial recipe ideas and develop skills which enable them to plan a tantalising menu for their dinner guests.

This year we started with the entrée choices of Cream of Chicken Soup or Thai Chicken Broth with Wontons. The students also prepared a Vegetable Minestrone and a Pumpkin Soup for vegan and vegetarian options. The students prepare all aspects of the recipes, including preparing their own chicken and vegetable stocks and wontons from fresh ingredients.

For mains we settled on Lamb and Chickpea Hot Pot, Prosciutto and Cheese Stuffed Chicken and Chicken Parmigiana with Kumara and Potatoes in Peanut and Coconut Sauce. Spinach and Ricotta Cannelloni were a vegetarian option.

For dessert there was a choice of Cherry Ripe Chocolate Cheesecake, Chocolate and Raspberry Pavlovas, Passionfruit and White Chocolate Panna Cotta, Sticky Date Pudding with Butterscotch Sauce and the vegan or vegetarian options of Apple and Dried Fruit Crumble or Poached Pears in red Wine Syrup.

The students were all involved in the preparation, plating and service of food as well as table setting. They were also able to put into place the restaurant service skills they learned in their week-long Smart Skills course.

We served over 50 people at the two dinners and we must thank the Rotary and Lions Clubs for supporting these Hospitality functions. Although a lot of hard work, these functions are very rewarding and the skills learned stay with the students forever. It is gratifying for students to see the culmination of such excellent team work.
